MTNTOUGH's "On the Road" workouts are dynamic 40-minute sessions designed to provide participants with a foundational understanding of MTNTOUGH programming. 9:30 AM - 10:30 AM Benchmade Knife Company Walleye Fillet Demo by Benchmade with Chef Kyle Mendenhall - at Lac La Croix Stage in Exhibit Hall B, Minneapolis Convention Center
Get a first look at Benchmade’s new Fishcrafter® fillet knife! Chef Kyle Mendenhall will demonstrate the best techniques for filleting walleye using the Fishcrafter®, discuss all the unique features of the knife and tips for preparing one of our favorite freshwater fish.

Learn to extract deer lymph nodes for CWD testing by MN DNR - at Lac La Croix Stage in Exhibit Hall B, Minneapolis Convention Center
Using a life-like replica of a deer head, Minnesota DNR biologists Michelle Carstensen and Logan Neu will demonstrate how to find and extract lymph nodes. Minnesota, along with many other states, offers the convenience of mail-in kits for submitting lymph nodes for CWD testing. This is a helpful skill for deer, elk, moose, and caribou hunters across the U.S.

12:30 PM - 2:30 PM Falconry Demo by Master Falconer & Biologist Jackie Fallon, MN Falconers Association - at Lac La Croix Stage in Exhibit Hall B, Minneapolis Convention Center
Falconry is no longer reserved for kings and nobles but that doesn’t make it an easy sport. Working with a wild bird of prey to become your partner in the field takes a tremendous amount of work and patience. Come and discover the legalities and realities of hunting with these amazing birds in the 21st Century by Master Falconer Jackie Fallon. Jackie will have several birds to share with the audience, highlighting their use and uniqueness in this ancient sport of Kings. The presentation will be from 12:30 PM - 1:15 PM, meet & greet with the birds to follow. 

3:30 PM - 4:00 PM Sausage Making by Walton's  - Lac La Croix Stage in Exhibit Hall B, Minneapolis Convention Center
This year, we're shifting gears from basic demonstrations to a deeper dive into crafting Snack Sticks. While pork will be our foundation, we'll also explore using wild game meat. Learn about essential equipment, additives for cured versus fresh sausage, ideal casings, smoke schedules, and packaging methods for optimal shelf-life. Elevate your sausage-making skills and expand your culinary horizons with us!

9:30 AM - 10:30 AM Wild Rice: Harvesting Heritage and Cooking of Minnesota’s State Grain by Greg Kvale and Gary Drotts  - Lac La Croix Stage in Exhibit Hall B, Minneapolis Convention Center
2-time Rendezvous Wild Game Cookoff Champion, and longtime ricer Greg Kvale will discuss the history of wild rice harvesting. Wild rice became Minnesota’s state grain in 1977 and is still exclusively harvested without the use of machinery or mechanical tools. Learn about the primitive tools and tactics used to harvest wild rice and a few recipes that make this foraged grain such a staple in wild cooking.
